Banana Muffins

If you want a simple staple breakfast item, then you have come to the right place! These banana muffins are quick to whip up and are sure to be a child-approved breakfast addition!

Ingredients (makes 12 muffins)


  • 2-3 bananas

  • 1 cup plant milk

  • 1/3 cup unsweetened applesauce

  • 1 tablespoon vanilla

  • 2 teaspoons apple cider vinegar

  • 1 cup sugar

  • 1 tablespoon baking powder

  • 2-2 1/4 cup all-purpose flour

  • 3/4 teaspoon salt

  • OPTIONAL: chocolate chips, nuts, or even berries (whatever your preference is)

Let's get cooking!


  1. Preheat oven to 400 F.

  2. Mash bananas in a large mixing bowl.

  3. Mix in the oil, plant milk, vinegar, sugar, and vanilla to the mixing bowl until well combined.

  4. Stir in flour and baking powder until evenly combined, being sure to not over mix. Fold in optional ingredients.

  5. Spray and line muffin tins, divide mixture, and bake for 20-25 minute, or until a toothpick can come out clean.
