Mediterranean Chickpea Salad

Enjoy this easy to make and refreshing salad that is convenient to pack for work! This dish serves as a "salad" or you can add pita chips as a vessel for this refreshing lunch!

Ingredients (serves 3)


  • 1 can garbanzo beans, drained and rinsed

  • 1/2 red bell pepper, diced

  • 1/2 yellow bell pepper, diced

  • 1 roma tomato, chopped

  • 1/2 cucumber, chopped

  • 1/4 cup diced red onion

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 2 tablespoons minced garlic

  • 1/4-1/2 teaspoons cayenne

  • OPTIONAL - Greek blend seasoning

Instructions


  1. Pour drained and rinsed garbanzo beans into a medium sized bowl. Combine with peppers, tomatoes, cucumber, and onion.

  2. Toss in lemon juice, garlic, cayenne, and optional greek blend until evenly distributed. Add salt and pepper if desired.

  3. Best served cold.
