Rainbow Chili

This vegan chili is packed with flavor! This dish is perfect is you want something cozy!

Ingredients (makes 3-4 servings)

  • 1 tablespoon olive oil

  • 2-3 tablespoons minced garlic

  • 1/2 cup chopped red onion

  • 1/2 tablespoon chili powder

  • 1 tablespoon cumin

  • 1/2 teaspoon oregano

  • 1 14-oz can diced tomato with green chiles

  • 1/2 tablespoon soy sauce

  • 3/4 cup vegetable broth (or water)*

  • 3 oz tomato paste

  • 1/2 tablespoon red wine vinegar

  • 1 8-oz can black beans

  • 1 8-oz can fiesta style corn

  • OPTIONAL - soyrizo or seitan

  • OPTIONAL TOPPINGS - vegan cheese, sour cream, and/or cilantro

*water is a great substitute if you do not have broth on hand; it will still be flavorful!

Let's Get Cooking!

  1. Heat the oil in a large pot over medium heat

  2. Add the garlic and onion and cook for about 5 minutes

  3. Add all of the seasonings and cook for another 2 minutes

  4. Add tomatoes, soy sauce, water/vegetable broth, tomato past and vinegar. Bring to a boil then simmer for 20 minutes

  5. Add the beans and optional soyrizo and simmer for an additional 15 minutes
